“I was diagnosed with a severe gluten sensitivity by my wonderful husband, Dr. Kremer, in March of 2011. For many, this diagnosis would have meant pure devastation, however for me this was the happiest day of my life. Prior to that day, I had spent 9 years of my life desperately trying to figure out why I felt like I was slowly falling apart despite my incredibly healthy and active lifestyle. Before submitting my saliva test in March of 2011, Dr. Kremer had performed a food allergy test of 96 most common foods to diagnose potential food allergies. The results came back with dairy and eggs elevated and all other foods INCLUDING THOSE WITH GLUTEN in normal ranges. I assumed my variety of symptoms, which included: anxiety, insomnia, irregular menstrual cycles, chronic sinus infections, and crippling gastrointestinal issues, were simply the result of these newfound food allergies. However, after eliminating dairy and eggs for well over 6 months my symptoms failed to subside and my desperation for an answer continued to grow.
In January of 2011 a company called Cyrex Labs came out with a new saliva test to specifically test for gluten sensitivities. I was Dr. Kremer’s first patient to take this test and the first to come back with drastically out-of-range results (since that test Dr. Kremer now submits atleast one saliva test per week and *most* come back with results that are out of normal range).
After my saliva test Dr. Kremer ordered an additional test to determine if there were other “cross reactive” foods that I would need to avoid in addition to gluten. With this test we found dairy and amaranth to be a cross-reactive foods; In other words my future diet would be void of all forms of wheat, barley, rye, dairy, and eggs (confirmed in my past allergy test).
